My usual afternoon snack is sliced veggies with hummus. I have always eating chickpea hummus and never branched out very far besides the occasional sprinkle of chilli or smoked paprika. This all changed when I had zucchini hummus for the first time at Café Gratitude. I absolutely loved this hummus and it made me look into different recipes for hummus. It turns out you can make hummus out of anything really.
The lovely staff at Café Gratitude were nice enough to tell me what is in their hummus, they couldn’t give me the entire recipe however after a few tries I managed to make an almost identical hummus.
Cilantro Zucchini Hummus:

Recipe type: Snack
Serves: 8
Ingredients:
1 cup zucchini
½ cup sunflower seeds
1 cup cilantro
½ cup olive oil
1 tbsp lemon juice
2 tbsp tahini
½ tsp salt
½ tsp black pepper
½ tsp cumin
¼ tsp cayenne pepper
Instructions:
Place all ingredients in a food processor or blender and process until smooth. Add water as needed.
Sprinkle with cayenne pepper to serve.
