How To Eat Artichokes

Artichokes are a vegetable, and while not as well-known as other veggies,  they are every bit as table worthy. They are low in saturated fat and cholesterol and are a rich source of fiber, vitamins, and minerals.

Furthermore, they are chock full of vitamins including vitamin C, thiamin, riboflavin, niacin, folate, vitamin B-6, B-12, A, E, D, and vitamin K. They are also rich in minerals including calcium, iron, zinc, sodium, potassium, manganese, phosphorus, and zinc.
