The blood orange is a variety of sweet orange but is slightly red in color. Besides giving you the much needed Vitamin C boost, blood oranges contain anthocyanins – the same red flavonoid pigments that give blueberries their colors and antioxidant properties.
So, here’s a recipe that will help you incorporate blood oranges into your diet.
Blood Orange Salad Recipe
Ingredients
1/2 cup of pine nut oil
2 tbsp balsamic vinegar
2 tsp whole grain mustard
1 tsp sugar
1 tsp kosher or sea salt
2 blood oranges, peeled, segmented and halved
4 cups baby spinach leaves
1/4 cup toasted pine nuts
3 ounces soft goat cheese, crumbled
Instructions
In a small jar with a lid, combine the pine nut oil, balsamic vinegar, mustard, sugar, and salt. Put the lid on the jar and shake. Set to the side.
Peel and segment the oranges. Cut the segments in half.
In a large bowl, add the spinach. Top with the orange pieces, pine nuts, and then crumble the goat cheese on top. Drizzle the dressing over the salad.
