Stuffed Peppers Recipe

Ingredients:

4 large bell peppers (any colour)
1lb lean (at least 80%) ground beef
2 tablespoons chopped onion
1 cup cooked rice
1 teaspoon salt
One clove garlic, finely chopped
1 can (15 oz) organic tomato sauce
3/4 cup shredded mozzarella cheese (3 oz)

1. Cut a thin slice from the stem end of each bell pepper to remove the top of the pepper. Remove seeds and membranes; rinse peppers. If necessary, cut a thin slice from the bottom of each pepper, so they stand up straight. In a 4-quart Dutch oven, add enough water to cover peppers. Heat to boiling; add peppers. Cook for about 2 minutes; drain.

2. In a 10-inch skillet, cook beef and onion over medium heat for 8 to 10 minutes, occasionally stirring, until beef is brown; drain. Stir in rice, salt, garlic and 1 cup of tomato sauce; cook until hot.

3. Heat oven to 350°F.

4. Stuff peppers with beef mixture. Stand peppers upright in an ungreased 8-inch square glass baking dish. Pour remaining tomato sauce over peppers.

5. Cover tightly with foil. Bake 10 minutes. Uncover and bake about 15 minutes longer or until peppers are tender. Sprinkle with cheese.

  1. I don’t like cooked spinach so I wonder if there another vegetable I can use in its place? This is one of the easiest low carb recipes I have seen. I’m single and don’t like cooking just for me, especially after a long work day. This seems so quick & easy that I can see making it even during the week. Holly Hooper

      You could either make the dish without the spinach dish and use raw baby spinach to add to it once cooked
      or
      You could pretty much replace the recipe with any other veggie

  6. I cooked your pancakes with my son just this morning! He spilled the almond milk all over the counter and dropped about 4 eggs, but it still worked and he was having fun with me rather than just plopped in front of the tv while I was alone in the kitchen!
